. While kiln-dried wood is great for fast lighting and high heat, the result is a quick pile of ashes. Who wants to cook with, essentially, large matches? Carolina Cookwood naturally cured/dried wood maintains key elements of the hardwood (sugars) within and is not completely dry. While the exterior portion of the split is dry, allowing for fast lighting, the interior has a slightly higher moisture content producing hot coals that last longer preserving the cooking heat within your oven and reducing the amount of wood used in each cook.
